What I Made This Week: Easy, Flavor-Packed Meals for Real Life

Some weeks I feel like I’m just surviving in the kitchen. But this week? I kind of crushed it. From homemade sourdough to garden-fresh dill, it’s been one of those weeks where the food actually felt fun again — and totally doable, even with a busy schedule and a toddler in tow.

If you’re looking for easy dinner ideas, simple lunch inspiration, or just want to see what another home cook is whipping up on a real-life weeknight, here’s what I made this week — packed with flavor, not stress.


1. Bacon Burger Bowls with Hand-Cut Fries & Special Sauce

These were everything. Ground beef seasoned and shaped into little burger patties, then served in a bowl with crispy bacon, lettuce, tomato, pickles, and a drizzle of my easy homemade “special sauce.” I made hand-cut fries in the air fryer, because once you go fresh-cut, frozen never tastes the same.
➡️ Tip: Use burger seasoning and a dash of smoked paprika to boost the flavor.

2. Egg Bites with Feta, Tomatoes & Fresh Garden Dill

I was unreasonably proud of this one—mostly because I finally managed to grow something in my garden (hi, dill!). These egg bites were made in a mini muffin tin with whisked eggs, crumbled feta, chopped cherry tomatoes, and fresh dill.
➡️ Perfect for: Meal prep breakfasts or toddler snacks.


3. Caprese Grilled Cheese on Homemade Sourdough

Fresh sourdough slices, layered with mozzarella, tomato slices, and a drizzle of balsamic glaze. I cooked them grilled-cheese style in olive oil mixed with basil for the crispiest golden crust. This was chef’s kiss delicious.
➡️ Make it extra: Add a sprinkle of salt to the tomatoes before assembling.


4. Beef & Cheddar Sandwiches with Tater Tots & Broccoli

A quick dinner win! Deli roast beef slices warmed with cheddar cheese on a sandwich bun, plus a swipe of Arby’s sauce for the full nostalgic effect. I threw some tots and broccoli on a sheet pan to bake while the sandwiches heated. Easy and totally satisfying.
➡️ Trader Joe’s Arby’s-style sauce is a must-have for this one.


5. Buffalo Chicken Toast

This one was kind of genius for a fridge-clean-out meal. I mixed canned chicken with buffalo sauce, layered it on toasted sourdough, topped it with shredded cheese, and finished it off in the oven until melted and bubbly. A little ranch + bleu cheese drizzle on top made it extra craveable.
➡️ Great for: Lunch, game day snacks, or late-night cravings.
